Even when she was older, she had to have pizza for breakfast. She made this when she visited Montego Bay, Jamaica.
Nicole’s English-Muffin Breakfast Pizza.
- 1 English muffin, whole-wheat and split
- 1 medium tomato, seeded and diced
- 1 tsp olive oil
- 1 slice vegan meat
- ¼ cup vegan mozzarella cheese, shredded
- 1 tbsp fresh basil, Chopped
- Cut the English muffin in half. Place the slice on a parchment lined baking tray with cut side up.
- Place tomatoes slices on top of the muffin and drizzle olive oil on top.
- Place vegan meat over tomatoes and layer vegan cheese on top.
- Place the baking tray in a preheated oven at 450-degree F for 12 minutes until the cheese melts.
- Garnish with fresh basil.
